Pro- Metabolic + Gluten Free Baked Blueberry Oatmeal
Here’s the deal.. I loove breakfast. It is probably my favorite meal of the entire day. And 99% of the time, I am content with eggs and breakfast sausage and some fruit, followed by a coffee. But lately (maybe it’s being in my third trimester of pregnancy, or being more active now that the weather is nice) I have been craving more carbohydrates. And these baked oatmeal bars have been doin the trick 🤤 I love that they are full of healthy ingredients, don't contain any refined sugars and are packed with added protein!
Not only are they super easy to throw together and meal prep ahead of time, but they keep in the fridge for several days and are convenient to heat up and have alongside some eggs and sausage for a hearty breakfast! Plus, I have adjusted the recipe to include some high-quality protein powder, as well as some other nutrient-dense, wholesome ingredients to make them an extra nourishing breakfast food (or snack.. or weekend brunch.. or late night snack)
And lastly, before I get any further into it… I am not a baker… and I do not make recipes regularly. But I do love finding an original recipe on Pinterest and tweaking it so that it fits my priorities: nutrient-dense, nourishing, easy to prep without taking much time, while also being a hit for the whole family (not too much to ask, am i right?? 😉) And these have consistently checked all of the boxes and are an absolute hit for my toddler!
Ingredients:
**as a note for ingredients- whenever available I recommend purchasing the highest quality you have access to. Whether that is grass-fed, pasture-raised, etc. or not. Just do the best you can with what you’ve got or have access to. I am a firm believer that cooking from home is a great first step and can make powerful changes to your health and wellness in and of itself. We are all about holistic wellness here.
2 cups organic oatmeal (we love to buy the organic sprouted oatmeal from the brand one degree. normally I can find it at our local costco, but it is also available on Thrive Market)
1 cup milk (or if non-dairy milk is your thing)
2 eggs
1 cup protein powder or hydrolyzed collagen (we love the grass-fed collagen from Perfect Supplements!)
1 cup blue berries (either fresh fruit or frozen work well)
dash of cinnamon
1 tsp sea salt
1 tsp vanilla extract
3 tablespoon chia seeds
2 tablespoons pure maple syrup
coconut oil or melted butter to grease baking dish or pan
Mix allllllll the ingredients up in a large bowl and pour into 8-inch pan or square baking dish
bake at 375 for 45 minutes (or until the center is fully cooked) and the edges are golden brown
Once finished cooking, allow to continue setting up for about 10 minutes.
Then feel free to enjoy or store in the fridge in an airtight container!
Variations
These are also delicious topped with peanut butter or almond butter. We don't tend to do a lot of nut butters in our house as we mostly avoid foods that are really high in polyunsaturated fats, but occasionally a drizzle of nut butter is a great addition!
you can also make these into an oatmeal cups version. Just pour the mixture into muffin tins coated with coconut oil and reduce the cook time
I have added sliced banana to these for a banana bread version, chopped up apples for apple cinnamon flavored oatmeal bake, lemon zest, nuts, dark chocolate chips, you name it.. there really isn't anything you couldn't add into these for added variety and flavors!
These oatmeal bars can also be crumbled up and used as granola for greek yogurt bowls
If you are looking to add more B vitamins into your diet, sprinkling bee pollen on top of these is a quick and easy way to get them into your diet!
I have been asked if you can make these with quick oats or steel cut oats and to be honest... I have no idea! I have only ever made it with one single brand of certified gluten-free oats that we buy for quality. Soo, if you use a different oat variety, let me know how it works out! Again, i'm no cook😅
